Prep Time15 minsTotal Time15 mins
Ingredients
 1 ½ kg ripe tomatoes
 160 g cucumber
 ½ green Italian pepper
 ½ medium onion
 ½ clove of garlic
 100 g stale breadcrumbs
 5 tbsp mild olive oil
 2 tbsp vinegar
 1 tbsp Maldon® salt
 1 ¼ l cold water
Steps for making traditional gazpacho
1

Place the olive oil and vinegar in a bowl and soak the stale breadcrumbs in it. Leave them to soak whilst you prepare the rest of the ingredients. This step helps to incorporate the bread into the mixture later on and contributes to a more uniform texture.

Wash the tomatoes and green pepper thoroughly. Remove the cores from the tomatoes and, in the case of the pepper, remove the stalk and seeds. Peel the garlic and remove the germ to achieve a milder flavour.

2

Chop the vegetables into chunks and place them in a food processor along with the breadcrumbs, salt and about half the cold water. Blend until the mixture is smooth.

There’s no need to chop the vegetables into very small pieces, as the food processor will break them down later. The amount of water can be adjusted afterwards depending on the texture you wish to achieve.

3

Gradually add the rest of the cold water until you achieve the desired consistency. The gazpacho can be lighter or slightly thicker, depending on personal preference.

Once blended, pass the mixture through a sieve or strainer to remove any remaining skins or seeds and achieve a smoother texture. Then, chill the gazpacho in the fridge until ready to serve. Serving it well chilled is essential to fully enjoy its refreshing qualities.

4

Serve the gazpacho well chilled and top with a spoonful of garnish. To finish off the presentation, you can use bread croutons and small cubes of tomato, green pepper and cucumber.

As well as adding colour to the dish, this garnish creates a contrast in textures between the creaminess of the gazpacho and the crunch of the vegetables and croutons.

Garnish:

Just before serving, garnish with croutons, diced tomato, green pepper and cucumber. This will make the dish look appealing and add a crunchy texture.

Tips for making a delicious homemade gazpacho

Choosing the right tomatoes is one of the most important aspects. The riper and more flavourful they are, the more intense the final result will be. It is also advisable to ensure all the ingredients are nice and fresh and to chill the gazpacho before serving.

The amount of water can be adjusted to suit personal taste. If you’re looking for a lighter gazpacho, you can add a little more cold water; if you prefer a thicker texture, reduce the amount.

Finally, the garnish makes it easy to personalise the dish. As well as tomatoes, peppers and cucumber, you can add croutons or small cubes of the very vegetables used in the recipe.

Variations on traditional gazpacho

Although the classic gazpacho features tomato as its star ingredient, this recipe also lends itself to various variations. We can replace some of the tomatoes with watermelon or strawberries to achieve a fruitier and more refreshing result. Another alternative is to make a version in which melon takes centre stage.

Among the varieties of melon that can be used are cantaloupe, Galia melon and the traditional ‘piel de sapo’ melon. These alternatives allow you to experiment with new flavours without losing the essence of a cold vegetable and fruit soup.

In this way, traditional gazpacho becomes a versatile recipe that can be easily adapted to the ingredients available and the tastes of each occasion.
