FALAFEL

Crispy on the outside, creamy on the inside and full of flavour. This falafel recipe is a healthy, tasty option that’s perfect for any time of day. We suggest serving them with an extra Mediterranean twist thanks to ILIADA DOP Kalamata  olives, renowned for their meaty texture and intense flavour, and dressed with extra virgin olive oil, which adds a touch of smoothness and aroma.

Making falafel with extra virgin olive oil and stuffed green olives
1

Preheat the oven or air fryer to 180°C. Place the falafel in the oven or air fryer and cook for about 10–12 minutes, until they are golden brown. You can also fry them in a pan if you prefer a crispier texture.

2

Make the yoghurt sauce. Mix the yoghurt with the cumin, lemon juice, a pinch of salt and a dash of extra virgin olive oil. Add chopped mint or parsley for an extra touch of freshness.

3

Assemble the dish. Serve the falafel with the sauce and add the ILIADA Kalamata olives, halved or whole, as desired. Finish with a generous drizzle of ILIADA extra virgin olive oil on top.
