WATERMELON AND FETA CHEESE SALAD

The combination of watermelon, cheese feta cheese and aromatic herbs creates a symphony of flavours and textures that is as pleasing to the palate as it is to the eye. This watermelon and feta salad isn’t just easy to prepare; it’s also perfect as a starter or to accompany any summer meal.

Ingredients for watermelon and feta cheese salad
 1/2 watermelon (seeded and diced)
 200g Meteora or Olympus feta cheese (crumbled)
 1 cucumber (peeled, deseeded and thinly sliced)
 1/4 red onion (finely julienned)
 A handful of fresh mint leaves (chopped)
 A handful of fresh basil leaves (chopped)
 1/4 cup extra virgin olive oil
 2 tablespoons of fresh lemon juice
 1 tablespoon of honey
 Maldon® salt flakes and pepper to taste
 Optional: a few leaves of rocket or baby spinach
Steps for making this watermelon and feta cheese salad

Prepare the watermelon. Cut the watermelon into bite-sized cubes and place them in a large bowl.

Prepare the other ingredients. Peel the cucumber, remove the seeds and slice it thinly. Add it to the bowl with the watermelon.

Next, slice the red onion into thin strips and add it to the bowl. Finally, crumble the feta cheese and add it to the mixture.

Chop the fresh mint and basil leaves and add them to the bowl.

Prepare the dressing. In a small bowl, mix the olive oil, lemon juice and honey until well combined. Season with Maldon salt flakes and pepper to taste.

Mix the watermelon and feta cheese salad. Pour the dressing over the salad and toss gently to ensure all the ingredients are well coated with the dressing.

Optional: add some leafy greens. If you like, add a handful of rocket or baby spinach to give the salad an extra touch of freshness and texture.

Serve. Finally, serve the watermelon and feta cheese salad straight away, preferably chilled, as a starter or as a side dish.
