VEGETABLE TAGINE
The vegetable tagine is a traditional dish from North African cuisine, renowned for its combination of intense flavours and slow cooking, which brings out all the aromas. This vegetarian version is light, nutritious and perfect for any occasion.
Thanks to the use of Ghee Easy, the vegetables are sautéed to a tender texture and an even more authentic flavour, bringing out every nuance of the spices. Ideal for a healthy lunch or a comforting dinner, this tagine will transport you with its exoticism and irresistible colours.

Prepare the ingredients. Wash and chop the carrots, courgettes, aubergine and red pepper into medium-sized pieces. Finely chop the onion and tomatoes.
Sauté the vegetables. In a casserole dish or a traditional tagine, melt the two tablespoons of Ghee Easy over a medium heat. Add the chopped onion and fry until golden brown. Add the carrots, aubergine and pepper, and sauté for a few minutes until they begin to soften.
Add the spices and cook. Add the spices (turmeric, cumin, ginger and cinnamon) and mix well to coat the vegetables. Add the chopped tomatoes, cooked chickpeas and vegetable stock. Season to taste.
Simmer gently. Cover the tagine and cook over a very low heat for about 40 minutes, stirring occasionally, until the vegetables are tender and the flavours have blended well.
Serve. Garnish with chopped fresh coriander before serving. You can serve it with couscous or pita bread.
