SHORTCRUST PASTRY RECIPE FOR TWO

Preheat the oven to 180°C.
Roll out the shortcrust pastry into two small tins or one medium-sized tin, and prick it lightly with a fork. Bake it for 10 minutes with a weight on top (you can use dried pulses to prevent it from rising).
Meanwhile, sauté the spinach in a little oil.
In a bowl, mix together the eggs, cream, salt, pepper and a pinch of nutmeg. Add the spinach.
Pour the mixture over the pre-baked pastry base and arrange the slices of goat’s cheese on top.
Bake for 20–25 minutes or until the filling has set and is golden brown.

Meanwhile, prepare the cream: heat the milk with the vanilla pod (or extract) until it comes to the boil.
Beat the egg yolk with the sugar and cornflour. Gradually add the hot milk, stirring constantly. Then return the mixture to the heat until it thickens.
Leave the cream to cool, then fill the tartlets with it.
Finally, decorate with fresh fruit and dust with icing sugar.
