RECIPES USING PHYLLO PASTRY

Filo pastry, which originated in the Mediterranean and features prominently in Greek and Middle Eastern cuisine, is an extremely thin and versatile dough that has become a key ingredient in both sweet and savoury recipes. Its light, crisp texture, once baked, allows for the creation of stunning dishes with unique contrasts in flavour and texture.

Baklava:

  • Ingredients. JR or Kanaki filo pastry, walnuts (or a mixture of walnuts, almonds and pistachios), butter, sugar, honey, cinnamon, water and lemon juice.
  • Method. To make baklava, alternate layers of filo pastry and chopped nuts mixed with cinnamon and sugar, drizzling each layer with melted butter. Bake until golden brown, then pour a syrup made from honey, water and lemon juice over the hot baklava.

Spanakopita (Greek spinach pie):

  • Ingredients. JR or Kanaki filo pastry, spinach, onion, garlic, feta cheese, eggs, dill, parsley and butter.
  • Method. Mix the cooked and drained spinach with the sautéed onion, garlic, feta cheese, eggs and herbs. Then layer the mixture between sheets of filo pastry, brushing each layer with melted butter, and bake until the pastry is golden and crisp.

Spring rolls:

  • Ingredients. JR or Kanaki filo pastry, minced meat (chicken, pork or beef), cabbage, carrots, onion, garlic, soy sauce and olive oil.
  • Preparation. To make spring rolls, sauté the minced meat with vegetables and seasoning. Then place the mixture on the filo pastry and roll it up. Bake or fry until golden brown.

Apple tart with filo pastry:

  • Ingredients. Filo pastry, apples, sugar, cinnamon, butter, walnuts (optional) and raisins (optional).
  • Method. First, mix the chopped apples with the sugar and cinnamon. Place the mixture between layers of filo pastry, brushing each layer with melted butter. Finally, bake until the tart is golden brown.

Cheese triangles (tiropita):

  • Ingredients: JR or Kanaki filo pastry, Meteora feta cheese, ricotta, eggs and butter.
  • Method. Mix the feta and ricotta with the beaten eggs. Cut the filo pastry into strips, place a tablespoon of the cheese mixture at one end and fold into a triangle. Finally, brush the pastries with butter and bake until golden brown.

Turkish börek:

  • Ingredients: JR or Kanaki filo pastry, spinach, Meteora feta cheese, minced meat (optional), onion, garlic, Olympus yoghurt, eggs and olive oil.
  • Preparation. Sauté the minced meat with onion and garlic, and mix the spinach with feta cheese and eggs. Once ready, layer the mixture between sheets of filo pastry, brushing each layer with a mixture of yoghurt and olive oil. Finally, bake until golden brown.

Apple strudel:

  • Ingredients: JR or Kanaki filo pastry, apples, sugar, cinnamon, raisins, breadcrumbs, butter and walnuts (optional).
  • Method. Mix the apples with sugar, cinnamon, raisins and walnuts. Spread the mixture over the filo pastry, sprinkled with breadcrumbs, and roll up. To ensure it turns golden brown when baking, brush the pastry with butter.

Filo pastry baskets with assorted fillings:

  • Ingredients. JR or Kanaki filo pastry, various types of filling (cheese and spinach, sautéed mushrooms, chicken curry, etc.) and butter.
  • Method. Cut the filo pastry into squares and place them in muffin tins to form baskets. Fill with your chosen mixture and bake until the filo pastry baskets are golden and crispy.
