PRAWN GYOZAS

Ingredients for prawn gyoza (serves 4)
 200 g of peeled and chopped prawns
 50 g Chinese cabbage, finely chopped
 1 spring onion, finely chopped
 1 clove of garlic, grated
 1 small piece of grated fresh ginger
 1 tablespoon of soy sauce
 1 teaspoon of toasted sesame oil
 A pinch of salt and pepper to taste
 20 gyoza wrappers (you can use JR filo pastry if you’re looking for a special touch)
 Vegetable cooking oil
 100 ml of water
 2 tablespoons of soy sauce
 1 tablespoon of rice vinegar
 1 teaspoon of sesame oil
How to make prawn gyoza

Prepare the filling. In a bowl, mix together the chopped prawns, cabbage, spring onion, garlic, ginger, soy sauce, sesame oil, salt and pepper. Make sure everything is well combined.

Fill the wrappers. Place a small amount of filling in the centre of each gyoza wrapper. Moisten the edges with a little water, fold the wrapper in half and pinch the edges together to seal, creating small pleats.

Cook the gyoza. Heat a little vegetable oil in a non-stick frying pan. Place the gyoza with the flat side down and cook over a medium heat until they are golden brown on the bottom (about 2 minutes).

Add the water. Pour 100 ml of water into the frying pan and cover immediately. Steam for 5 minutes or until the water has evaporated. Remove the lid and allow the gyoza to brown a little more.

Prepare the sauce. Mix all the sauce ingredients together in a small bowl.

Serving suggestion. Serve the prawn gyoza hot, accompanied by the dipping sauce.
