YOGHURT AND HONEY MOUSSE
The quest for the perfect dessert is often a battle between decadent flavour and nutritional lightness. However, when we combine premium ingredients such as artisanal Greek yoghurt and nature’s ‘liquid gold’, the result is a Honey and Yoghurt Mousse that redefines elegance in simple cooking.

Preparing the gelatine base. The first step is crucial to prevent lumps. In a small bowl, mix the gelatine powder with 2 tablespoons of cold water. Leave it to soak for a couple of minutes. Once it has set, you can heat it in the microwave for a few seconds until it becomes liquid, but without letting it boil.
The main smoothie. In the blender jug or a food processor, add the Mandrekas yoghurt, sweetened milk, vanilla essence and a dash of Amaretto liqueur. Blend on a medium speed until you have a smooth, light and airy mixture.
Incorporating the honey and the finishing touch. With the mixture still stirring, add the liquid gelatine and the two tablespoons of warm honey. The temperature of the honey is important: if it is too cold, it will set too quickly; if it is warm, it will blend in like a silk thread, infusing the mousse with its aroma.
Leave to rest and chill. Carefully pour the mixture into 6 small bowls or individual glass cups. It is essential to let the mousse ‘set’. Place the bowls in the fridge and leave them there for at least 5 hours. This allows the gelatine to set and the flavours of the Amaretto and honey to develop.
The chef’s finishing touch. Just before serving, garnish the top with the caramelised walnuts or almonds. This not only adds visual appeal, but also breaks up the monotony of textures with an irresistible crunch.

Consejos para un resultado gourmet
Honey takes centre stage. For this recipe, we recommend using varieties renowned for their purity and sourced from the finest blooms in Greece. Thyme or wildflower honey will take the mousse’s aromatic profile to a whole new level.
Temperature control. Make sure the yoghurt is at room temperature before mixing it with the warm gelatine. If the yoghurt is too cold, the gelatine may set prematurely, resulting in small strands or lumps.
Alcohol-free version. If you’d rather avoid the Amaretto, you can replace it with a few drops of almond extract or simply leave it out; the vanilla and honey have plenty of flavour on their own, whilst the crunch adds an irresistible contrast to the otherwise uniform texture.
