PUFF PASTRY SAUSAGE FINGERS
These puff pastry sticks with sausages are a classic, crispy and delicious snack, perfect for any informal get-together. Thanks to the quality of Marie puff pastry, you can achieve a light, golden texture with minimal preparation and in no time at all.

Preheat the oven (180°C). Before you start making the sausage fingers, preheat the oven to 180 °C. It is important that the oven has reached the correct temperature by the time we put the puff pastry in, as this will ensure the pastry cooks evenly and takes on its characteristic golden colour. Whilst the oven is heating up, we can prepare the rest of the ingredients and have them ready to assemble the recipe. This will make the process quicker and easier.
Prepare the puff pastry. Unroll the Marie pure butter puff pastry and cut it into 4 strips. Spread sweet mustard onto each strip and sprinkle grated Emmental cheese on top. The mustard adds a touch of flavour that goes particularly well with the sausages, whilst the cheese will melt during baking and help to create a more flavourful centre.
Wrap the sausages. Place a Strasbourg sausage on top of each strip of puff pastry. Then roll the pastry around the sausage until it is completely covered. It is important to seal the two edges of the pastry well to prevent it from opening during baking. You can press the seam lightly with your fingers to ensure it is properly sealed. This step also helps to keep the filling inside whilst the puff pastry is baking.
Brush with egg and sprinkle with the seeds. Once the four rolls are ready, place them on a baking tray. Brush them with egg yolk, making sure to cover the entire surface of the puff pastry. The egg yolk will help to achieve a golden, glossy finish whilst baking. To finish, sprinkle some poppy seeds on top. As well as adding a decorative touch, the seeds give the final result a different texture.
Bake. Place the sausage rolls in the oven preheated to 180 °C and leave them to cook for approximately 15 minutes. The cooking time may vary slightly depending on the oven, so it is advisable to keep an eye on the colour of the pastry during the final few minutes. When the pastry is golden brown and looks crispy, remove the tray from the oven. Leave the sausage rolls to rest for a few minutes before serving to avoid burning yourself and to ensure they are at the right temperature to enjoy as a snack.
Tips for making puff pastry sausage rolls
To ensure the puff pastry turns out golden and crispy, it is important to place the rolls in the oven once it has reached 180 °C. You should also make sure the pastry is tightly sealed around the sausages to prevent it from opening up during cooking.
The mustard and cheese can be divided evenly amongst the four strips of puff pastry. This way, every bite will have a balanced combination of all the ingredients.
The poppy seeds can be added immediately after brushing the puff pastry with egg yolk. This will ensure they stick to the surface and help to enhance both the presentation and the texture of the appetiser.
