PISTACHIO TIRAMISU
Pistachio tiramisu has become one of the most sought-after Italian desserts in recent years. In this recipe, we use the delicious pistachio cream from Scyavuru.

Prepare the cream. In a large bowl, mix the mascarpone cheese with the Scyavuru pistachio cream until you achieve a smooth, creamy texture. Add the icing sugar and continue to mix gently. Meanwhile, in another bowl, whip the chilled cream until it forms stiff peaks. Fold it into the mascarpone mixture little by little, using a folding motion to maintain a light, airy texture.
Prepare the sponge fingers. Make the espresso and leave it to cool completely. If you want a more intense and sophisticated flavour, you can add a small splash of Amaretto or Marsala. Quickly dip the sponge fingers in the coffee. It is important not to soak them too much to prevent the tiramisu from becoming too soggy.
Assemble the tiramisu. In a rectangular dish or individual glasses, arrange a first layer of sponge fingers soaked in coffee. Cover with a generous layer of pistachio cream and spread it evenly. Sprinkle some chopped pistachios on top to add a crunchy texture. Repeat the process, building several layers, and finish with a final layer of cream.
Chill. Keep the tiramisu in the fridge for at least 4 hours, although ideally you should leave it to set overnight. This will allow the flavours to blend better and give it a much creamier texture.
