OAT AND BANANA PANCAKES

Prepare the oats. Place the oats in a blender or food processor and blend until you have a fine flour.
Mix the ingredients together. In a bowl, mash the banana until it forms a purée. Add the eggs, milk, vanilla essence, crushed oats, baking powder and salt. Mix well until you have a smooth batter.
Cook the pancakes. Heat a non-stick frying pan over a medium heat and lightly grease it with oil or butter. Pour portions of the batter into the hot pan, forming circles about 10 cm in diameter. Cook each pancake for 2–3 minutes on each side, or until golden brown and cooked through.

Tips

- For an extra touch of flavour, you can add a handful of walnuts or chocolate chips to the mixture. To taste.
- If the mixture is too thick, add a little more milk until you reach the desired consistency.
