GRAPEFRUIT, LIME AND MINT YOGHURT PARFAIT

Peel and clean the grapefruit. Cut off the ends of each fruit so that it sits steadily on the chopping board. Using a sharp knife, remove the skin and all the white pith, taking care to remove as much of the membrane as possible. Then separate the segments by cutting along the membranes that divide them. This will give you cleaner, more pleasant-tasting pieces of grapefruit.

Make the citrus yoghurt.  Put the Olympus natural yoghurt in a bowl and add the lime zest and juice. Mix gently until all the ingredients are well combined. The lime should add freshness and tartness without overpowering the flavour of the yoghurt, so it’s best to add it a little at a time and taste as you go.

Assemble the layers. Divide roughly half the grapefruit between four glasses or bowls. Add a layer of yoghurt on top, then repeat the process with another layer of fruit and another of yoghurt. Finish with honey and mint. Just before serving, drizzle a little honey over each parfait and garnish with a few lightly chopped fresh mint leaves. The honey helps to balance the tartness of the grapefruit and lime, whilst the mint adds a refreshing aroma.

Tips for making the perfect parfait

To ensure the result is particularly creamy, it is advisable to use natural yoghurt with a certain thickness. If you wish to enhance the citrus flavour, you can add a little more lime zest, always using only the green part of the peel.

Grapefruit also deserves special attention. Ideally, it should be ripe, firm and juicy. It is important to remove the membranes thoroughly, as they contain much of the fruit’s bitter flavour.

Finally, it is best to add the honey and mint at the very end. This helps to preserve the mint’s aroma and prevents the honey from mixing too much with the yoghurt. If prepared in advance, the glasses can be kept in the fridge and the garnish added just before serving.
