Prepare the kataifi. Gently shred the Kanaki kataifi with your fingers to loosen its fine strands. In a pan with a little melted butter, lightly toast it until it turns golden and crispy. Set it aside.

2

Melt the chocolate and butter. Break the Dubai chocolate into pieces and place it in a heat-resistant bowl together with the butter. Melt the mixture using a double boiler or in the microwave in short intervals, stirring until you achieve a smooth, homogeneous texture.

Whisk the eggs and sugar. In another bowl, whisk the eggs with the sugar until the mixture becomes frothy and lighter in color. Add the vanilla extract.

4

Combine the ingredients. Slowly incorporate the chocolate and butter mixture into the beaten eggs, gently stirring to avoid losing the air in the mixture.

5

Sift the dry ingredients. Mix the flour, cocoa powder, and salt. Sift these ingredients over the chocolate mixture and fold gently until you obtain a smooth, even batter.

6

Add the kataifi. Fold in the toasted kataifi, distributing it evenly so it adds its crunchy texture in every bite.

7

Bake. Pour the mixture into a previously greased baking pan and bake at 170°C (340°F) for about 25–30 minutes. The inside should remain moist and slightly fudgy.

8

Let it cool and serve. Allow the dessert to rest before removing it from the pan. You can dust it with cocoa powder or decorate it with more golden kataifi to enhance its presentation.
