How to make a date sponge cake

Preparing the dates. Place the chopped dates in a bowl and cover them with hot water. Add the bicarbonate of soda and leave to stand for 15 to 30 minutes. If desired, add a small amount of molasses or dark honey to enhance the flavour, along with a pinch of salt to balance the sweetness.

Serving. Turn the sponge cake out of the tin and cut it into individual portions. Serve warm with the freshly made toffee sauce, pouring it generously over the top so that every bite is infused with flavour. Optionally, it can be served with vanilla ice cream, whipped cream or crème fraîche to provide a contrast in temperature.
