BRANDADE CONES

These little brandade cones are a delicious culinary creation that combines the lightness of filo pastry with the smoothness and flavour of cod brandade. These filled cones offer a unique culinary experience, perfect as appetisers or starters for special occasions. The recipe is simple to prepare and allows you to enjoy a combination of textures and flavours that will delight even the most discerning palates.

Ingredients
 5 sheets of filo pastry
 50 g melted butter
 1 lemon
 ½ red pepper
 ¼ of a cucumber
 1 purple radish
 1 glass of cod brandade with garlic and herbs (120 g)
 1 glass of cod brandade (120 g)
How to make brandade cones

To make the brandade cones:

  • Preheat the oven to 180°C.
  • Cut the sheets of filo pastry into quarters and brush them with melted butter.
  • Roll them into cones, making sure they are well sealed with a little more butter if necessary.
  • Place the cones on a baking tray lined with baking paper, inserting a paper or aluminium cone into each one to help them keep their shape whilst baking.
  • Bake for about 10 minutes, until they turn golden brown.
  • Once baked, carefully remove the paper cones and leave the filo pastry cones to cool on a wire rack.

Prepare the fillings:

  • Wash and cut the red pepper, cucumber and radish into thin strips.
  • Cut the lemon in half: slice one half into wedges, and then into triangles, and grate the zest from the other half.

Filling the cones:

  • Fill the cones with the cod brandade, using the brandade with garlic and herbs to top with chopped chives, and the gourmet brandade to serve with cucumber.
  • Garnish with the vegetable sticks and lemon slices, and sprinkle with lemon zest.
