WATERMELON AND FETA SALAD RECIPE
When the summer heat sets in, there is nothing more satisfying than a fresh, light salad. The combination of watermelon, feta cheese and aromatic herbs creates a symphony of flavors and textures that is as pleasing to the palate as it is to the eye. This watermelon and feta salad is not only easy to prepare, but it is also perfect as a starter or side dish for any summer meal.

Watermelon and feta salad ingredients
- 1/2 watermelon (seeded and cut into cubes)
- 200 grams of Meteora or Olympus feta cheese (crumbled)
- 1 cucumber (peeled, seeded and cut into thin slices)
- 1/4 red onion (cut into fine julienne)
- A handful of fresh mint leaves (chopped)
- A handful of fresh basil leaves (chopped)
- 1/4 cup extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey
- Maldon® Salt Flakes® and pepper to taste
- Optional: a few arugula leaves or baby spinach
Steps to follow to make this watermelon and feta salad
- Prepare the watermelon. Cut the watermelon into bite-sized cubes and place in a large bowl.
- Prepare the other ingredients. Peel the cucumber, remove the seeds and cut it into thin slices. Add it to the bowl with the watermelon. Then cut the red onion into fine julienne strips and add it to the bowl. Finally, crumble the feta cheese and add it to the mixture and chop the mint and fresh basil leaves and add them to the bowl.
- Prepare the dressing. In a small bowl, whisk together the olive oil, lemon juice and honey until well combined. Season with Maldon salt flakes and pepper to taste.
- Mix the salad. Pour the dressing over the salad and toss gently to ensure all ingredients are well coated with the dressing.
- Optional: add green leaves. If desired, add a handful of arugula or baby spinach to give an extra touch of freshness and texture to the salad.
- Serve. Finally, serve the watermelon and feta salad immediately, preferably cold, as a starter or accompaniment.
