
WHITE PEACH AND VANILLA SWEET FLOWERS
This dessert allows you to enjoy the best flavours of summer. The sweet white peach and vanilla flowers combine visual elegance with an explosion of freshness and sweetness.
The recipe, simple if you follow the steps, is remarkable for its technique and precision. To begin with, a thin crunchy sweet pastry acts as a base. On top of this, layers of vanilla cream and a sphere of white peach cream alternate, all sitting on a sponge cake.

Ingredients (for 6 flowers)
For the flower base:
- 250 g white peach puree from les vergers Boiron
- 50 g sugar
- 5 g NH pectin
- 1 vanilla pod.
For the finish:
- Fresh mint leaves (optional)
- Edible flowers to decorate (optional)
- Icing sugar to taste

- Prepare the base. In a saucepan, heat the white peach puree together with the seeds from the vanilla pod. Heat over medium heat until it reaches 40°C.
- Add the dry ingredients. Mix the sugar with the NH pectin and add to the hot puree, stirring constantly.
- Cook. Continue cooking until the mixture reaches 85°C, stirring constantly to avoid lumps.
- Moulding. Pour the preparation into flower-shaped silicone moulds and allow to cool to room temperature. Then refrigerate for at least 2 hours until solid.
- Unmould and decorate. Carefully unmould, sprinkle with icing sugar and decorate with edible flowers or fresh mint.
