Tagliatelle al Ragu

TAGLIATELLE WITH VEGETABLE RAGU

INGREDIENTS (for 4 persons)

500g tagliatelle Emma Giordani 

1 onion, finely chopped 

2 celery sticks, finely chopped 

2 carrots, diced 

4 garlic cloves, crushed 

1 tbsp each tomato purée and balsamic vinegar 

250g diced vegetables, such as courgettes, peppers and mushroom 

50g red lentil 

400g cans chopped tomatoes with basil 

2 tbsp shaved parmesan 

ELABORACIÓN

STEP 1
Toss the onion, celery and carrots in a large saucepan and add 2-3 tablespoons of water or broth, if you have it. Simmer, stirring frequently, until the vegetables are soft.

STEP 2
Add the garlic, tomato puree and balsamic vinegar, cook over high heat for 1 more minute, add the diced vegetables, lentils and tomatoes and bring to a boil.

STEP 3
Simmer for about 20 minutes. Meanwhile, cook the Emma Giordani pasta according to package directions and drain. Season the ragu and serve with the pasta and Parmesan cheese on top, if desired.

STEP 4
Enjoy a delicious Italian dish like tagliatelle al ragu. Easy and tasty at the same time.
