Ingredients for Greek yogurt mousse with red fruits

  • 500 g plain Greek yogurt (unsweetened)
  • 200 ml whipping cream (heavy cream, with at least 35% fat)
  • 100 g powdered sugar
  • 1 teaspoon vanilla extract
  • 200 g of fresh or frozen red fruits (strawberries, blueberries, raspberries, blackberries)
  • 2 sheets of gelatin (or 1 sachet of unflavored gelatin powder)
  • 2 tablespoons of water (to hydrate the gelatin)
  • Optional: lemon or orange zest to flavor

Steps to make Greek yogurt mousse

1. Prepare the gelatin

  • If you use gelatin leaves, hydrate them in a bowl with cold water for 5 minutes. If you use powdered gelatin, dissolve it in the 2 tablespoons of water and let it sit for a few minutes.
  • Once hydrated, heat the gelatin (in the microwave or in a double boiler) until it is completely dissolved, but without boiling. Let it cool while you prepare the rest of the mousse.

2. Whip the cream

  • In a large bowl, beat the heavy cream with the icing sugar and vanilla until it forms soft peaks. It is important that the cream is very cold so that it whips correctly.
  • Reserve the whipped cream in the refrigerator while you continue with the next step.

3. Add the yogurt

  • In another bowl, lightly beat the Greek yogurt to make it creamier and smoother.
  • Add the dissolved gelatin to the yogurt, mixing carefully to integrate it well.

4. Mix the yogurt with the cream

  • Take the whipped cream out of the refrigerator and add it to the yogurt in circular movements, using a spatula so as not to lose the air that we have incorporated when whipping the cream.
  • Mix until you obtain a homogeneous and light texture, creating the base of the mousse.

5. Prepare the red fruits

  • If you use frozen berries, let them defrost and drain them well to prevent them from releasing too much liquid. If you use fresh fruits, clean them and cut them into small pieces (you can leave some whole for decoration).
  • Mix a small amount of the berries with the yogurt mousse or, if you prefer, leave the berries as a top layer for visual contrast.

6. Assemble the mousse

  • Distribute the mousse in glasses, individual glasses or in a large mold, alternating layers of mousse with red fruits if you want a more attractive presentation.
  • Cover and refrigerate for at least 2-3 hours or until the mousse is firm and well set.

7. Decorate and serve

  • Before serving, decorate the mousse with more fresh berries and, if desired, a touch of lemon or orange zest to give it a citrus and festive touch.
  • You can also add fresh mint leaves or sprinkle a little powdered sugar for an elegant finish.
