YOGHURT CREAM WITH FRUIT

Ingredients (4 persons)

  • 400 g Mandrekas Greek yoghurt
  • 2 tbsp honey or agave syrup
  • 1 tsp natural vanilla extract
  • 200 g assorted fresh fruit (strawberries, kiwi, blueberries, mango, etc.)
  • 2 tbsp chopped walnuts or almonds (optional)
  • Maldon® salt flakes (optional, for a sophisticated contrast)
  • Fresh mint leaves for garnish
  • Some chia seeds or granola for added texture (optional)

Preparation of yoghurt cream with fruit

  1. In a large bowl, mix the Mandrekas yoghurt with the honey and vanilla. Beat with a spoon or whisk until smooth and creamy.
  2. Wash, peel and cut the fruit into small pieces. If using soft fruits such as strawberries or bananas, handle them carefully so that they keep their shape.
  3. In individual glasses or bowls, place a layer of yoghurt cream as a base.
  4. Add a generous layer of fresh fruit and a sprinkling of seeds or nuts, if desired.
  5. Top with more yoghurt and repeat the process until the bowls are full.
  6. Garnish the top with fruit, Maldon salt flakes, crunchy granola and a few mint leaves.
  7. Serve chilled or keep in the fridge until ready to enjoy.
