BRANDADE CONES

The small brandade cones are an exquisite gastronomic creation that combines the lightness of filo pastry with the softness and flavour of cod brandade. These small stuffed cones offer a unique culinary experience, perfect for appetizers or starters at special events. The recipe is simple to prepare and allows you to enjoy a combination of textures and flavours that will delight the most demanding palates.

INGREDIENTS

  • 5 sheets of filo pastry
  • 50 g melted butter
  • 1 lemon
  • ½ red pepper
  • ¼ cucumber
  • 1 purple radish
  • 1 glass of brandade of morue with garlic and herbs (120 g)
  • 1 glass of brandade of cod (120 g)

PREPARATION OF BRANDADE CONES

1.Prepare the cones:

Preheat the oven to 180°C.
Cut the filo pastry sheets into quarters and brush them with melted butter, roll them out into cones, making sure they are well sealed with a little more butter if necessary.
Roll them into cones, making sure they are well sealed with a little more butter if necessary.
Place the cones on a baking tray lined with baking paper, inserting a baking paper or aluminium foil cone in each one to hold their shape during baking.
Bake for about 10 minutes, until golden brown.
Once baked, carefully remove the paper cones and let the filo dough cones cool on a wire rack.

2. Prepare the fillings:

Wash and cut the red pepper, cucumber and radish into small sticks.
Cut the lemon in half: one half into slices and then into triangles, and grate the zest from the other half.

3. Fill the cones:

Fill the cones with the cod brandade, using the brandade with garlic and fine herbs to fill with chopped chives, and the gourmet brandade to go with the cucumber.
Garnish with the vegetable sticks, the lemon slices and sprinkle with the lemon zest.
